Kalenjin Mursik Porridge — finger millet porridge prepared with mursik (fermented milk) instead of water, combining two of the Kalenjin community's most sacred foods. The legendary breakfast of Kenya's great runners.
Mursik porridge is the breakfast at training camps in Iten, Eldoret, and across the Kalenjin highlands where Kenya's greatest runners prepare for world records and Olympic medals.

The Kalenjin are internationally famous for producing the world's greatest long-distance runners. Mursik — fermented milk — is considered central to Kalenjin athletic performance and cultural identity. Mursik porridge combines the probiotic-rich fermented milk with finger millet — the legendary breakfast of Kalenjin athletes for generations.
Ingredients
Equipment: Medium saucepan, Wooden spoon
- 1 cup finger millet flour
- 2 cups mursik or natural yogurt as substitute
- 1 cup water
- 2 tbsp honey
- Pinch of salt
Method
- Mix millet flour with cold water to a smooth slurry.
- Heat the mursik gently in a saucepan — do not boil.
- Add the millet slurry to the warm mursik, stirring constantly.
- Cook over medium-low heat for 10—12 minutes, stirring continuously, until thick.
- Season with honey and a pinch of salt.
- Serve warm.
Chef Tips
- Do not boil the mursik hard — excessive heat destroys the probiotic bacteria.
- Natural yogurt is the best substitute if mursik is unavailable.
