The Giriama are the largest of the nine Mijikenda sub-groups. Their coconut chicken preparation is distinct from Swahili kuku wa Nazi — it incorporates wild coastal forest herbs and a simpler spice profile reflecting Giriama culinary identity. The coastal forest environment shapes this dish fundamentally.
Ingredients
Equipment: Large pot with lid, Wooden spoon
- 1 kg chicken pieces — bone-in
- 400ml thick coconut milk
- 2 medium onions — chopped
- 3 medium tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 2 tbsp vegetable oil
- 1 tsp turmeric
- 1 tsp ground coriander
- 2 tsp salt
- ½ cup fresh herbs — coriander, basil, wild coastal herbs
- 1 tbsp lemon juice
Method
- Brown chicken in hot oil in batches. Remove.
- Cook onions until golden — 6 minutes.
- Add garlic, ginger, tomatoes, turmeric, and coriander. Cook for 8 minutes.
- Return chicken. Add coconut milk and half the herbs.
- Bring to a gentle simmer — do not boil hard.
- Cover and cook for 35—40 minutes until chicken is completely tender.
- Add remaining fresh herbs and lemon juice.
- Serve immediately.
