Ingredients

Equipment: Very large pot (6L+), Wooden spoon

  • 800g dried mixed beans — red kidney, borlotti, and black-eyed peas
  • 3 large onions — finely chopped
  • 6 medium tomatoes — diced
  • 5 garlic cloves — minced
  • 2 tbsp ginger — grated
  • 4 tbsp vegetable oil
  • 2 tbsp tomato paste
  • 2 tsp curry powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 3 tsp salt
  • ½ cup fresh coriander

Method

  1. Soak beans overnight. Drain.
  2. Cook in fresh water for 60—75 minutes until tender. Drain, reserve 2 cups liquid.
  3. Heat oil in large pot. Cook onions until deeply golden — 10 minutes.
  4. Add garlic, ginger, tomatoes, tomato paste, and spices. Cook for 10 minutes until very thick.
  5. Add cooked beans and reserved liquid.
  6. Simmer for 20—25 minutes until thick and richly flavoured.
  7. Season generously. Garnish with fresh coriander.
