The Kenyan beef burger has its own character — the patty is seasoned with garlic, fresh coriander, and Kenyan spices rather than plain salt and pepper. The kachumbari replaces the standard tomato and onion. The avocado adds the creaminess that cheese would otherwise provide. The result is unmistakably Kenyan.

Ingredients

Equipment: Mixing bowl, Pan or grill

    Beef patties

    • 500g minced beef
    • 2 garlic cloves — minced
    • 2 tbsp fresh coriander — finely chopped
    • 1 tsp paprika
    • ½ tsp cumin
    • 1 tsp salt
    • ½ tsp black pepper
    • 1 egg yolk — for binding

    Assembly

    • 4 burger buns — toasted
    • 2 tbsp garlic mayo
    • 2 tbsp kachumbari
    • 1 ripe avocado — sliced
    • 4 lettuce leaves
    • 4 slices cheese — optional

    Method

    1. Mix minced beef with garlic, coriander, spices, salt, pepper, and egg yolk. Do not over-mix.
    2. Shape into 4 patties. Press a small dent in the centre of each.
    3. Refrigerate 15 minutes — helps them hold shape.
    4. Cook over medium-high heat for 4—5 minutes per side for medium.
    5. Toast the buns in the same pan.
    6. Assemble: bun base, garlic mayo, lettuce, patty, kachumbari, avocado slices, bun top.

    Chef Tips

    • The dent in the patty centre prevents it from puffing into a dome during cooking.
    • Do not press the patty during cooking — this squeezes out the juices.
    • Rest the cooked patty for 2 minutes before assembling.

    Common Mistakes to Avoid

    • Over-mixing the meat — tough patty.
    • Pressing during cooking — dry patty.

    The Science

The egg yolk emulsifies the fat in the minced beef, helping the patty hold together during cooking. The coriander's volatile compounds partially survive cooking, contributing to the distinctive aroma of the finished Kenyan burger.
