Mandazi
Tanzanian Mandazi — light, slightly sweet, triangle or round deep-fried doughnuts fragrant with cardamom and coconut milk. The universal Tanzanian breakfast bread — eaten daily from Dar es Salaam to Dodoma, from Arusha to Zanzibar.
Mandazi are the morning bread of Tanzania — fluffy, lightly sweetened, cardamom-fragrant triangles or rounds that are eaten with chai, with stew, or simply on their own. Every Tanzanian household makes them. Every street vendor sells them. They are to Tanzania what the croissant is to France.
Ingredients
Equipment: Mixing bowl, Rolling pin, Deep frying pan
- 3 cups all-purpose flour
- 1 tsp active dry yeast or 2 tsp baking powder
- 3 tbsp sugar
- ½ tsp ground cardamom
- ½ tsp salt
- 150ml warm coconut milk
- ½ cup warm water
- 1 egg
- Oil for deep frying
Method
- Mix flour, yeast/baking powder, sugar, cardamom, and salt.
- Beat egg into coconut milk. Add to dry ingredients with enough water to form a soft dough.
- Knead for 5 minutes. Cover and rest 60 minutes (yeast) or 15 minutes (baking powder).
- Roll to 1cm thickness. Cut into triangles or circles.
- Heat oil to 170°C.
- Fry in batches for 3—4 minutes, turning, until golden all over.
- Drain on paper towels. Serve warm.
Chef Tips
- Coconut milk gives mandazi their characteristic flavour — do not substitute with water.
- Cardamom is the signature — be generous.
- Fry at 170°C — too hot burns outside before inside cooks through.
Common Mistakes to Avoid
- Too hot oil.
- Under-resting the dough.
- Over-crowding the fryer.
The Science
The CO2 from yeast (or baking powder) creates bubbles in the dough during the rest period. When the dough hits hot oil, these bubbles expand rapidly with the heat, creating the characteristic light, airy interior.
