Muhogo wa Nazi is the Tanzanian coast's most generous treatment of cassava — simmering it in coconut milk until each piece absorbs the sweetness and fragrance of the coconut. Sold at coastal markets and served as a snack throughout the day, it is one of the great simple pleasures of coastal Tanzania.
Ingredients
Equipment: Large pot
- 600g fresh cassava — peeled and cut into chunks
- 400ml thick coconut milk
- 1 cup water
- 2 garlic cloves — minced
- ½ tsp turmeric
- 1 tsp salt
- 1 tsp sugar — optional
- 2 tbsp fresh coriander
Method
- Peel cassava, remove woody fibre, cut into chunks.
- Pre-boil in salted water for 15 minutes until nearly tender. Drain.
- Combine coconut milk, water, garlic, turmeric, salt, and sugar in a pot.
- Add par-boiled cassava.
- Simmer gently for 10—15 minutes until cassava is completely tender and coconut sauce thickens.
- Scatter coriander. Serve.
