🍛 Tanzanian Rice with Stew

Wali wa Mchuzi is the combination that defines Tanzanian everyday eating — plain white rice alongside a rich, flavourful stew. At every mama lishe in Dar es Salaam, this is what workers eat for lunch. The rice is always plain; the stew does the talking.
Ingredients
Equipment: Rice pot with lid, Stew pot
- 2 cups long-grain rice — washed
- 3 cups water
- 1 tsp salt
Simple Beef Stew
- 400g beef — cubed
- 2 onions — diced
- 3 tomatoes — diced
- 3 garlic cloves — minced
- 1 tbsp ginger
- 2 tbsp oil
- 1 tsp curry powder
- 1 tsp paprika
- 2 tsp salt
- 1 cup water
Method
- Cook rice by absorption method: combine rice, water, and salt. Bring to a boil. Cover. Lowest heat for 18 minutes. Rest 5 minutes.
- Brown beef in oil. Remove.
- Cook onions until golden. Add garlic, ginger, tomatoes, spices.
- Cook 8 minutes until thick. Return beef. Add water.
- Simmer covered 30—40 minutes until tender.
- Serve rice with stew alongside.
