🍛 Tanzanian Chicken Curry

Tanzanian Mchuzi wa Kuku — chicken simmered in a rich tomato-coconut curry sauce fragrant with Tanzanian spices, fresh coriander, and green chilli. The everyday chicken curry of Tanzania — warming, aromatic, and deeply satisfying.
Tanzanian chicken curry is distinct from Indian curry — it is built on a tomato base rather than yogurt, uses coconut milk for richness, and the spicing is warmer than it is hot. It is the chicken dish that appears at every Tanzanian family meal, mama lishe stall, and celebration table.
Ingredients
Equipment: Large wide pan with lid
- 1 kg chicken pieces — bone-in
- 2 large onions — diced
- 4 medium tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 200ml coconut milk
- 3 tbsp vegetable oil
- 2 tsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1—2 green chillies
- 2 tsp salt
- ¼ cup fresh coriander
Method
- Brown chicken pieces in oil. Remove.
- Cook onions until golden.
- Add garlic, ginger, spices, and chillies. Cook 1 minute.
- Add tomatoes. Cook 8 minutes until thick.
- Return chicken. Add coconut milk.
- Simmer covered for 30—35 minutes until chicken is cooked through.
- Garnish with coriander.
Chef Tips
- Bone-in chicken gives the best flavour.
- Add coconut milk after the tomato base is well reduced — prevents splitting.
- Never boil coconut milk hard.

- Adding coconut milk too early.
- Boneless chicken — less flavour.
