Ingredients

Equipment: Wide pan

  • 600g large prawns — peeled and deveined
  • 2 onions — finely diced
  • 3 tomatoes — diced
  • 4 garlic cloves — minced
  • 1 tbsp ginger
  • 200ml coconut milk
  • 3 tbsp oil
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp cumin
  • 1—2 green chillies
  • 2 tsp salt
  • ¼ cup fresh coriander
  • 1 tbsp lemon juice

Method

  1. Pat prawns completely dry.
  2. Cook onions until golden. Add garlic, ginger, chillies, spices.
  3. Add tomatoes. Cook 6 minutes until thick.
  4. Add coconut milk. Bring to gentle simmer.
  5. Add prawns. Cook gently 4—5 minutes until pink.
  6. Add lemon juice and coriander.

  • Prawns take only 4—5 minutes.
  • Loose C = perfect; tight O = overcooked.
  • Dry prawns essential.
