🍅 Tanzanian Tomato and Onion Salad
Kachumbari ya Tanzania
Tanzanian Kachumbari — fresh tomatoes, red onion, and green chilli tossed with lemon juice, coriander, and salt. Tanzania's equivalent of the East African kachumbari — the fresh salad that accompanies nyama choma, pilau, and ugali.
Kachumbari is as Tanzanian as it is Kenyan — the shared Swahili coastal salad tradition produces identical preparations in both countries. The tomatoes must be ripe and firm, the onion wafer-thin, and the lemon generous.
Ingredients
Equipment: Bowl
- 4 large ripe firm tomatoes — diced
- 1 medium red onion — very thinly sliced
- 1—2 green chillies — thinly sliced
- 3 tbsp fresh lemon or lime juice
- ¼ cup fresh coriander — chopped
- 1 tsp salt
- ½ tsp black pepper
Method
- Dice tomatoes into even 1cm pieces.
- Slice onion as thinly as possible.
- Combine tomatoes, onion, and chilli in a bowl.
- Add lemon juice, coriander, salt, and pepper.
- Toss gently. Taste and adjust.
- Serve immediately — do not rest long or tomatoes become watery.

- Wafer-thin onion is the signature — use a sharp knife or mandoline.
- Ripe but firm tomatoes only — soft tomatoes become watery immediately.
- Serve within 15 minutes of assembling.

The Science
Salt draws water from the tomato and onion cells through osmosis — after 15 minutes the kachumbari becomes watery as the cells release their fluid. Serving immediately preserves the fresh, bright texture.
