Ingredients
Equipment: Heavy saucepan
- 1.5 cups short-grain rice or sushi rice
- 500ml thick coconut milk
- 2 cups water
- 3 tbsp sugar
- ½ tsp ground cardamom
- 1 tsp rose water
- Pinch of salt
Optional garnish: toasted coconut, fresh mango slices
Method
- Combine rice, coconut milk, water, sugar, and salt.
- Bring to a boil, stirring.
- Reduce to lowest heat. Stir regularly.
- Cook 25—30 minutes until rice is completely soft and the mixture is thick and creamy.
- Add cardamom and rose water. Stir.
- Serve warm, garnished with toasted coconut and fresh mango.
