Tanzanian Chai ya Viungo — strong black tea brewed with fresh ginger, cardamom, cloves, and cinnamon, sweetened and enriched with milk. The Swahili coast's most beloved morning beverage — more spiced than chai masala, more fragrant than plain tea.
Swahili spiced tea is the morning ritual of the Tanzanian coast — the tea brewed in a pot with fresh ginger and whole spices, sweetened generously, and served with mahamri or vitumbua. It is the beverage that accompanies the first prayer call and the first light on the Indian Ocean.
Ingredients
Equipment: Medium saucepan
- 4 cups water
- 3 tbsp black tea leaves (or 4 tea bags)
- 1 cup milk
- 3 tbsp sugar
- 3cm fresh ginger — roughly crushed
- 4 cardamom pods — bruised
- 3 cloves
- 1 small cinnamon stick
Method
- Combine water with ginger, cardamom, cloves, and cinnamon.
- Bring to a boil. Simmer 3 minutes to extract spices.
- Add tea leaves. Simmer 2 minutes.
- Add milk and sugar.
- Bring back to a near-boil. Remove just before it boils over.
- Strain into cups.
Chef Tips
- Bring to just before boiling — do not boil after adding milk.
- Fresh ginger crushed (not sliced) releases more aromatics.
- More sugar than you think — coastal chai is sweet.
