Zanzibar halwa is unlike any other halwa in the world — the combination of the Zanzibar cardamom, the saffron, and the rose water produces a sweet of extraordinary fragrance and depth. It requires 60 minutes of continuous stirring — a labour of love that signals how important the recipient is.

Ingredients

Equipment: Heavy non-stick saucepan, Wooden spoon, Greased pan for setting

  • 1 cup cornstarch
  • 3 cups sugar
  • 4 cups water
  • 100g ghee
  • ½ tsp saffron — soaked in 2 tbsp warm water
  • 1 tsp ground cardamom
  • 2 tsp rose water
  • ½ tsp ground nutmeg

Method

  1. Dissolve cornstarch in 1 cup cold water until completely smooth.
  2. Dissolve sugar in remaining 3 cups water. Bring to a boil.
  3. Slowly pour the cornstarch slurry into the boiling sugar syrup, stirring constantly.
  4. Add ghee. Continue stirring constantly over medium heat.
  5. The mixture will thicken — keep stirring for 45—60 minutes.
  6. When the halwa leaves the sides of the pan and is translucent, add saffron water, cardamom, rose water, and nutmeg.
  7. Stir 5 more minutes.
  8. Pour into greased pan. Smooth the top. Cool completely (3—4 hours).
  9. Cut into small squares.

  • Continuous stirring is non-negotiable — any pause creates lumps.
  • The halwa is ready when it peels cleanly from the sides of the pan.
  • It must cool completely before cutting — cutting warm creates a sticky mess.
