Ingredients

  • 1.2 kg lamb — cubed, marinated overnight in yogurt-spice mix
  • 5 cups basmati rice — parboiled 70%
  • 3 onions — fried golden
  • ½ tsp saffron in warm milk
  • 4 tbsp ghee
  • 2 tbsp rose water
  • ½ cup coriander
  • ¼ cup raisins
  • ¼ cup fried cashews

Marinade: 1 cup yogurt, 5 garlic, 2 tbsp ginger, 2 tsp garam masala, 1 tsp turmeric, 2 tsp paprika, 2 tsp salt

    2. Lamb requires 50—60 minutes pre-cooking to reach 90% doneness.
    3. Seal tightly. Dum 30—35 minutes over lowest heat.
