Ingredients

Equipment: 20cm round cake tin, Oven at 175°C, Electric mixer for frosting

  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cardamom
  • ½ tsp salt
  • 3 large eggs
  • 1 cup sugar
  • 200ml thick coconut milk
  • 100ml vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp lime zest

Coconut Cream Frosting

  • 200ml coconut cream — chilled overnight
  • 3 tbsp icing sugar
  • ½ tsp vanilla

Topping: ½ cup desiccated coconut — toasted golden

    Method

    1. Preheat oven to 175°C. Grease and line cake tin.
    2. Whisk together flour, baking powder, baking soda, cardamom, and salt.
    3. In a separate bowl, beat eggs and sugar until pale — 3 minutes.
    4. Add coconut milk, oil, vanilla, and lime zest. Mix.
    5. Fold wet into dry until just combined — do not over-mix.
    6. Pour into tin. Bake 35—40 minutes until a skewer comes out clean.
    7. Cool completely before frosting.
    8. Frosting: whip chilled coconut cream with icing sugar and vanilla until fluffy.
    9. Frost the cooled cake. Press toasted coconut all over.
