Tanzanian Mandazi Tamu — the enriched, sweeter, softer dessert mandazi. Made with coconut milk, extra sugar, double cardamom, and an egg for richness — fried until deeply golden and dusted with icing sugar. The elevated version of Tanzania's everyday doughnut.
Mandazi Tamu is what the everyday mandazi becomes when it is made for special occasions — more sugar, coconut milk instead of water, an extra egg, and double the cardamom. The result is a richer, softer, more fragrant doughnut that is genuinely a dessert rather than just a breakfast.
Ingredients
Equipment: Rolling pin, Deep frying pan
- 3 cups all-purpose flour
- 2 tsp baking powder
- 4 tbsp sugar
- 1.5 tsp ground cardamom
- ½ tsp ground nutmeg
- ½ tsp salt
- 2 eggs
- 250ml warm coconut milk
- 2 tbsp melted butter
- Oil for deep frying
- Icing sugar for dusting
Method
- Mix flour, baking powder, sugar, cardamom, nutmeg, and salt.
- Beat eggs into warm coconut milk. Add melted butter.
- Combine wet and dry. Mix to a soft, slightly tacky dough.
- Knead 5 minutes until smooth. Rest covered 60 minutes.
- Roll to 1.5cm thickness. Cut into triangles or circles.
- Fry at 170°C for 4 minutes per side until deeply golden.
- Drain on paper towels.
- Dust generously with icing sugar while still warm.
- Serve warm.

- Double the cardamom of a street mandazi — this is a dessert.
- Coconut milk only — no water — for the richest result.
- The icing sugar must go on while still warm so it adheres.
Common Mistakes to Avoid
- Under-seasoning with cardamom.
- Dusting icing sugar on cold mandazi — it slides off.
