  • 3 tomatoes — diced
  • 3 garlic cloves
  • 2 tbsp oil
  • 1 tsp turmeric
  • 2 tsp salt

Method

  1. Heat oil. Cook onions until golden. Add garlic, turmeric, tomatoes. Cook 6 minutes.
  2. Add cassava and water. Cover and cook 15 minutes until nearly tender.
  3. Add coconut milk. Bring to a gentle simmer.
  4. Add fish pieces. Spoon sauce over.
  5. Cover and simmer gently 12 minutes.
  6. Add greens on top. Cover 3 more minutes until wilted.
  7. Season with salt.
