Nyamwezi dried meat is the original travel food of Tanzania's interior — thinly sliced beef dried in the sun for 2 days produces a lightweight, highly concentrated protein that keeps for weeks without refrigeration. The Nyamwezi traders who carried ivory and copper hundreds of kilometres to the coast ate this dried meat throughout their journey.
Ingredients
Equipment: Drying rack or clean rope in full sun, Sharp knife
- 1 kg beef — lean cuts (topside or rump), sliced 3—4mm thin
- 2 tbsp coarse salt
- 1 tsp black pepper (optional)
Method
- Slice beef very thin (3—4mm) against the grain.
- Rub each slice with coarse salt on both sides.
- Hang slices on a rack or rope in full direct sunlight.
- Dry for 2 days in hot sun. Bring in at night.
- The meat is ready when completely dry, dark, and rigid.
- Store in a clean dry cloth or container.
- To eat: eat as is, or reconstitute in a stew.

- Slice thinly and against the grain — dries faster and more evenly.
- Full sun is essential — partial shade produces uneven drying and possible spoilage.
- Add the dried meat to stews directly — it reconstitutes beautifully.
