🍷 Haya Banana Wine
Omuramba — Divai ya Ndizi ya Wahaya
Haya Omuramba — the banana wine of the Kagera region. Ripe bananas fermented with sorghum for 5—7 days into a clear, lightly alcoholic beverage of remarkable quality. One of East Africa's finest traditional fermented drinks — made by the Haya people of Tanzania's Great Lakes region.
Omuramba banana wine is the Haya's most important ceremonial drink — made for weddings, funerals, birth celebrations, and royal occasions. It is distinct from Chaga mbege (TZA242) in its longer fermentation, use of different banana varieties, and the addition of sorghum. The result is a clearer, more refined fermented beverage.
Ingredients
Equipment: Large clay or food-grade fermentation vessel, Straining cloth, Gourds or clean containers for serving
- 10 kg very ripe cooking bananas — not dessert bananas
- 1 kg sorghum grain — roasted and ground
- 5 litres water
Method
- Peel bananas. Knead vigorously until completely mashed into a liquid pulp.
- Add roasted sorghum flour. Mix well.
- Add water. Stir thoroughly.
- Transfer to a clean fermentation vessel.
- Cover with banana leaves and a cloth.
- Ferment 5—7 days, stirring daily.
- After 5—7 days, strain through cloth, pressing firmly.
- The strained liquid is omuramba — serve at room temperature.
Chef Tips
- The kneading of the bananas is the most labour-intensive step — it must be thorough.
- Temperature and time determine sweetness vs sourness.
- The sorghum provides yeast and structure.

- Under-kneading bananas.
- Insufficient fermentation time.

Cultural Note
