The Haya peanut sauce (ekitooke) is the defining condiment of Kagera cooking — richer and more complex than plain groundnut sauce because of the smoked fish addition, which adds a deep umami note that carries throughout the meal.

Ingredients

Equipment: Mortar and pestle, Saucepan

  • 1 cup raw groundnuts — roasted and pounded coarsely
  • 50g smoked fish — flaked finely
  • 2 onions — diced
  • 3 tomatoes — diced
  • 2 tbsp oil
  • 1.5 tsp salt
  • 1.5 cups water

Method

  1. Roast groundnuts until golden. Pound coarsely in mortar.
  2. Heat oil. Cook onions until golden. Add tomatoes. Cook 6 minutes.
  3. Add smoked fish. Stir to combine.
  4. Mix pounded groundnuts with ½ cup warm water.
  5. Add to the pot. Add remaining water.
  6. Simmer 15 minutes until thick. Season.

  • The smoked fish is what makes this Haya rather than generic peanut sauce.
  • Pound, do not blend — coarser texture is traditional.
