Alicha Wat is the other half of Ethiopian cooking — while Key Wat dominates with heat and red colour, Alicha Wat provides the yellow-golden, mild, aromatic counterpoint. Made without berbere and without significant chilli, it is the stew that children and those who cannot handle heat eat, the balance on the mesob platter.

Ingredients

Equipment: Heavy pot

  • 700g beef chuck — cubed
  • 3 large onions — very finely diced
  • 3 tbsp kibbeh
  • 1 tsp turmeric
  • 1 tsp ground ginger
  • 5 garlic cloves — minced
  • 1 tbsp fresh ginger
  • 1 tsp ground coriander
  • ½ tsp black pepper
  • 1 cup water
  • 1.5 tsp salt

Method

  1. Dry caramelise onions — 20 minutes, no oil.
  2. Add kibbeh. Cook 2 minutes.
  3. Add turmeric and ground ginger. Stir 1 minute — do not add berbere.
  4. Add garlic, fresh ginger, coriander, and pepper.
  5. Add beef. Stir to coat.
  6. Add water. Simmer covered 75—80 minutes.
  7. The sauce should be golden-yellow and thick. Season.

Chef Tips

  • Alicha Wat should be distinctly yellow — turmeric is generous here.
  • No berbere at all — the mild flavour is the point.
  • The dry-caramelised onion base is the same as Key Wat — the technique does not change.

Common Mistakes to Avoid

  • Adding berbere — this destroys the 'alicha' (mild) character.
  • Insufficient turmeric.

The Science

Turmeric's curcumin dissolves into the kibbeh fat — distributing the yellow colour and anti-inflammatory compounds uniformly through the stew. Without the competing red carotenoids of berbere, the turmeric produces the characteristic golden-yellow colour.
