Ethiopian Berbere Fish — whole fish or thick fillets marinated in berbere paste for 1 hour, then baked or pan-roasted until the berbere forms a magnificent crust. The simplest expression of the berbere tradition applied to fish — powerful, direct, and unmistakably Ethiopian.
Berbere Fish is the directest application of Ethiopia's national spice to its freshwater fish — marinate deeply, cook simply, let the berbere do the work. The result is fish that carries the full complex heat of berbere without the sauce of a wat.
Ingredients
Equipment: Oven at 200°C or heavy pan
- 4 fish pieces (fillets or steaks, 150g each)
Berbere Paste Marinade
- 4 tbsp berbere
- 2 tbsp oil
- 4 garlic cloves — minced
- 2 tbsp lemon juice
- 1 tsp salt
Method
- Mix berbere, oil, garlic, lemon, and salt into a paste.
- Score fish if whole. Rub paste into every surface and into score marks.
- Marinate 1 hour minimum.
- Oven method: bake at 200°C for 18—22 minutes until berbere crust is caramelised.
- Pan method: heat pan. Cook 4—5 minutes per side.
- Internal temperature: 63°C.

- Do not be timid with the berbere — the quantity is correct.
