🌶️ Ethiopian Berbere Chicken

Ethiopian Berbere Chicken — chicken pieces marinated in a berbere, kibbeh, garlic, and ginger paste for 2 hours, then pan-fried or grilled until the berbere crust caramelises magnificently. The dry-spiced berbere chicken — the Ethiopian equivalent of Southern fried chicken, entirely its own creation.
Berbere Chicken is what modern Ethiopian restaurants serve when they want to present the berbere tradition in an accessible format — the chicken is marinated, then cooked by high heat rather than slow simmering. The result is a berbere-crusted chicken of extraordinary fragrance and flavour.
Ingredients
Equipment: Cast iron pan or grill
- 8 chicken pieces — bone-in thighs and drumsticks
Berbere Marinade
- 3 tbsp berbere
- 2 tbsp kibbeh
- 4 garlic cloves — minced
- 1 tbsp ginger
- 1 tbsp lemon juice
- 1 tsp salt
Method
- Mix marinade. Score chicken pieces deeply.
- Push marinade into score marks and all over.
- Marinate minimum 2 hours — overnight best.
- Bring to room temperature 30 minutes before cooking.
- Pan-fry in a little kibbeh over medium heat: 8—10 minutes per side.
- Or grill over charcoal: 10—12 minutes per side.
- Internal temperature must reach 74°C.
- Rest 5 minutes before serving.

- Medium heat — berbere burns at high heat.
