Ethiopian roasted chicken applies the same berbere-kibbeh tradition to a whole roasted bird — the overnight marinade penetrates deeply, and the oven's dry heat caramelises the berbere on the skin into an extraordinary crust.
Ingredients
Equipment: Roasting pan, Oven at 200°C
- 1 whole chicken (1.5 kg) — spatchcocked or whole
Overnight Marinade
- 4 tbsp berbere
- 3 tbsp kibbeh
- 5 garlic cloves — minced
- 2 tbsp ginger
- 2 tbsp lemon juice
- 1 tbsp tomato paste
- 2 tsp salt
Method
- Mix all marinade ingredients thoroughly.
- Score chicken skin deeply. Push marinade under the skin and into every crevice.
- Marinate overnight — minimum 8 hours.
- Bring to room temperature 1 hour before roasting.
- Roast at 200°C for 60—75 minutes.
- Baste with pan juices every 20 minutes.
- The berbere skin should be deeply caramelised — dark red-brown and fragrant.
- Rest 15 minutes before carving.
Chef Tips
- Push marinade under the skin — it penetrates the meat rather than just colouring the exterior.
- Spatchcocking (removing backbone) produces more even roasting.
- The berbere crust should be dark but not burnt — watch carefully in the last 15 minutes.
