Ethiopian Doro Tibs — boneless chicken pieces sautéed fast and hot in kibbeh with onions, jalapeños, tomatoes, rosemary, and berbere. The chicken version of the beloved Ethiopian tibs — faster than Doro Wat, equally satisfying, and irresistibly fragrant.
Doro Tibs is the everyday chicken dish for when Doro Wat's 2.5 hours are not available — the same kibbeh, berbere, jalapeño, and rosemary combination that makes beef tibs great, applied to chicken pieces. Done in 20 minutes, it delivers maximum Ethiopian flavour in minimum time.
Ingredients
Equipment: Cast iron pan or heavy skillet
- 600g boneless chicken — breast or thigh, cut into pieces
- 3 tbsp kibbeh
- 1 large onion — diced
- 2 medium tomatoes — diced
- 2 jalapeños — sliced
- 3 garlic cloves — minced
- 1.5 tsp berbere
- 1 sprig fresh rosemary
- 1 tsp black pepper
- 1 tsp salt
Method
- Pat chicken pieces dry.
- Heat kibbeh in a heavy pan until smoking hot.
- Sear chicken in a single layer — 3 minutes per side.
- Add onion. Stir and cook 2 minutes.
- Add garlic, jalapeño, and rosemary. Stir 1 minute.
- Add tomatoes, berbere, black pepper, and salt.
- Toss everything together for 2 more minutes.
- Chicken should be cooked through — internal temperature 74°C.
- Serve immediately.

The Science
Chicken proteins denature at lower temperatures than beef — the myosin in chicken begins denaturing at 50°C, which is why chicken achieves its Maillard crust faster than beef.
