Ethiopian Minchet Abish — seasoned minced beef cooked with berbere, kibbeh, onions, tomatoes, and a touch of niter kibbeh into a thick, richly spiced meat sauce eaten with injera or ayib. Ethiopia's everyday minced meat dish — less ceremonial than kitfo, more accessible, deeply satisfying.
Minchet Abish is the everyday minced beef dish of Ethiopia — cooked through (unlike kitfo), sauced (unlike tibs), and deeply spiced with berbere. It is the weekday version of the celebration dishes — completely satisfying and far simpler to prepare.
Ingredients
Equipment: Heavy pan
- 500g minced beef
- 2 onions — diced
- 2 tomatoes — diced
- 4 garlic cloves
- 1 tbsp ginger
- 2 tbsp kibbeh
- 2 tbsp berbere
- 1 tbsp tomato paste
- ½ cup water
- 1 tsp salt
Method
- Dry caramelise onions — 15 minutes.
- Add kibbeh. Add berbere. Toast 2 minutes.
- Add garlic, ginger, tomato paste, and tomatoes. Cook 5 minutes.
- Add minced beef. Break up. Brown thoroughly — 8 minutes.
- Add water. Simmer 20 minutes until thick.
- Season.

- Break the mince up thoroughly — no lumps.
- The sauce should be thick enough to scoop with injera.
Common Mistakes to Avoid
- Lumpy mince.
- Too thin — cook until thick.
