Siga ke-Dinich Wat is the practical everyday version of Key Wat — the addition of potatoes extends a smaller quantity of beef into a full family meal while the potatoes absorb the berbere sauce and become magnificent in their own right.
Ingredients
Equipment: Heavy pot
- 500g beef — stewing cuts
- 400g potatoes — peeled and cubed
- 2 onions — diced
- 2 tbsp kibbeh
- 3 tbsp berbere
- 4 garlic cloves
- 1 tbsp ginger
- 1 cup water
- 2 tsp salt
Method
- Dry caramelise onions — 15 minutes.
- Add kibbeh and berbere. Toast 3 minutes.
- Add garlic, ginger. Add beef. Coat in sauce.
- Add water. Simmer covered 45 minutes.
- Add potatoes. Simmer 20 more minutes.
- Potatoes should be completely tender and orange from the berbere.

- Add potatoes last — they cook faster than beef.
- The berbere potatoes are often the most popular element of this dish.
