Ingredients

Equipment: Roasting pan, Oven at 150°C, Foil

  • 1.5 kg bone-in lamb shoulder

Overnight Marinade

  • 4 tbsp berbere
  • 3 tbsp kibbeh
  • 6 garlic cloves — minced
  • 2 tbsp ginger
  • 1 tbsp tomato paste
  • 2 tbsp lemon juice
  • 2 tsp salt

Method

  1. Pierce shoulder deeply all over. Rub marinade in thoroughly. Refrigerate overnight.
  2. Bring to room temperature 1.5 hours before roasting.
  3. Roast covered with foil at 150°C for 90 minutes.
  4. Remove foil. Raise to 200°C for 20—30 minutes to caramelise.
  5. Rest 20 minutes. Pull apart or carve.

  • Low and slow for 90 minutes creates falling-tender meat.
