Ethiopian Quanta — beef marinated in berbere and mitmita, sun-dried for 2 days until preserved, then deep-fried in kibbeh until crispy. Ethiopia's ancient beef preservation technique — intensely spiced, chewy, extraordinarily flavourful dried beef that keeps for weeks.
Quanta is Ethiopia's preserved beef tradition — strips of beef marinated in berbere and mitmita, dried in the highland sun for 2 days, then deep-fried in kibbeh until crispy and concentrated. The result is one of the most intensely flavoured beef preparations in the world — fiery, chewy, complex.
Ingredients
Equipment: Drying rack in full sun, Heavy pan for frying
- 1 kg lean beef — sliced into thin strips 2—3cm wide
- 3 tbsp berbere
- 1 tsp mitmita
- 1 tsp salt
- 1 tbsp kibbeh — for the marinade
Frying: 3 tbsp kibbeh
Method
- Mix berbere, mitmita, salt, and 1 tbsp kibbeh.
- Coat beef strips thoroughly.
- Hang on a rack in direct sun for 2 days. Bring in at night.
- The strips are ready when dry, stiff, and dark.
- To cook: fry dried strips in hot kibbeh for 3—4 minutes per side until very crispy.
- Eat as-is or use in Quanta Firfir.
Chef Tips
- The drying must be complete — undried quanta does not keep.
- The frying in kibbeh at the end adds the final layer of flavour.
- Quanta keeps for weeks in an airtight container.
Common Mistakes to Avoid
- Insufficient drying.
- Thick cuts — do not dry evenly.
