Ethiopian Quanta Firfir — torn day-old injera tossed with crispy fried quanta (dried beef), kibbeh, and berbere. The most intensely flavoured firfir — the quanta adds extraordinary depth, chewiness, and concentrated beef flavour to the injera scramble.

Ingredients
Equipment: Wide pan
- 3 pieces day-old injera — torn
- 100g quanta — fried and broken into pieces
- 2 tbsp kibbeh
- 1 tsp berbere
- 1 small onion — diced
- Salt to taste
Method
- Fry quanta in kibbeh until very crispy. Remove. Break into pieces.
- In the same kibbeh: cook onion until golden.
- Add berbere. Stir 30 seconds.
- Add torn injera. Toss to coat.
- Add quanta pieces. Toss to combine.
- Cook 3 minutes. Serve immediately.
Chef Tips
- The quanta must be very crispy before adding to the injera.
- The residual quanta flavour in the kibbeh is the secret.
Common Mistakes to Avoid
- Soft quanta — fry more.
- Not using the quanta-flavoured kibbeh.
The Science
Frying quanta in kibbeh extracts the Maillard compounds from the dried beef surface into the fat — the kibbeh then carries these compounds throughout the firfir as it coats the injera pieces.
