Ethiopian Kitfo Leb-Leb — hand-minced prime beef warmed very gently in mitmita-infused kibbeh for 3—4 minutes until the exterior turns slightly grey but the interior remains pink and raw. The preferred middle path of kitfo — warmer than raw, more flavourful than fully cooked.
Kitfo Leb-Leb ('tender and warm') is the preparation most Ethiopians prefer — the hand-minced beef is warmed in kibbeh until the very outside cooks slightly while the interior remains essentially raw. It is the most complex textural experience in Ethiopian cooking.
Ingredients
Equipment: Small saucepan or wide pan
- 500g beef tenderloin — hand-minced
- 3 tbsp kibbeh — mitmita infused
- 1.5 tsp mitmita
Mekelesha: ½ tsp cardamom, ¼ tsp coriander, ¼ tsp rue
- 1 tsp salt
Serve with: ayib (ETH096) and gomen (ETH086)
Method
- Hand-mince beef as per ETH029.
- Warm mitmita-infused kibbeh in a pan over medium-low heat.
- Add beef. Gently break up and warm — 3—4 minutes only.
- Stir gently. The exterior should just begin to lose its raw colour.
- Remove from heat immediately.
- Add mekelesha. Season.
- Serve immediately with ayib and gomen.
Chef Tips
- Medium-low heat only — high heat cooks it fully.
- Watch carefully — the window between leb-leb and fully cooked is narrow.
- The ayib is essential — eat every bite of kitfo with some ayib.

- Too high heat — fully cooked.
- Not eating with ayib.
The Science
Leb-leb achieves a pasteurisation-adjacent effect on the exterior while the interior (which is insulated from heat by the outer layer) remains essentially raw. The protein denaturation temperature for myosin is 54°C — at leb-leb level, the outer millimetre reaches this temperature while the core remains below 40°C.
