🫘 Ethiopian Beef and Lentil Stew

Ethiopian Beef and Lentil Stew — a combination of cubed beef and red lentils cooked together in a berbere sauce. The lentils extend the beef, thicken the sauce naturally, and add plant protein to produce a complete, economical, deeply nourishing stew.
Siga Misir Wat is the practical family wat — combining the flavour and prestige of beef with the economy and nutrition of red lentils. The lentils dissolve partially into the sauce, thickening it naturally and adding their protein to the beef.
Ingredients
Equipment: Heavy pot
- 400g beef — cubed
- 1 cup red lentils — washed
- 2 onions — diced
- 2 tbsp kibbeh
- 3 tbsp berbere
- 4 garlic cloves
- 1 tbsp ginger
- 2 cups water
- 2 tsp salt
Method
- Dry caramelise onions — 15 minutes.
- Add kibbeh and berbere. Toast 3 minutes.
- Add garlic and ginger. Add beef. Coat.
- Add water. Simmer covered 40 minutes.
- Add lentils. Simmer 25—30 more minutes.
- Lentils should dissolve and thicken the sauce.
Chef Tips
- Add lentils after the beef is half-cooked — they need only 25—30 minutes.
- Red lentils dissolve — creating a naturally thick sauce.
Common Mistakes to Avoid
- Adding lentils too early — they disintegrate before the beef is tender.
The Science
Red lentils have had their seed coat removed — this allows them to absorb water and dissolve much faster than whole lentils. The dissolved lentil starch and protein thickens the sauce naturally.
