Ethiopian Fried Nile Perch — Nile perch or tilapia marinated in berbere, garlic, and lemon, coated in spiced flour and deep-fried until golden and crispy. The lake restaurant staple of Bahir Dar, Hawassa, and Ziway — the crispy fish that lake-town visitors always order.
Fried Nile perch is the iconic dish of Ethiopia's lakeside towns — Bahir Dar on Lake Tana, Hawassa on Lake Hawassa, Ziway on Lake Ziway. The fresh catch is marinated in berbere and lemon, coated in spiced flour, and fried until magnificently crispy. Eaten with injera and fresh salad, it is one of Ethiopia's great casual dining experiences.
Ingredients
Equipment: Deep frying pan
- 600g Nile perch or tilapia fillets — skin on
Berbere Marinade
- 2 tbsp berbere
- 2 tbsp lemon juice
- 3 garlic cloves — minced
- 1 tsp salt
- ½ tsp turmeric
Spiced Flour Coating
- ½ cup all-purpose flour
- 1 tsp berbere
- ½ tsp salt
- Oil for deep frying
Method
- Marinate fish in berbere, lemon, garlic, turmeric, and salt for 15 minutes.
- Mix coating: flour with berbere and salt.
- Heat oil to 175°C.
- Coat each fish piece in the spiced flour.
- Fry in batches — 4—5 minutes per side until deep golden.
- Drain on paper towels.
- Serve immediately.
