🐟 Ethiopian Fish Tibs
አሣ ጥብስ — Asa Tibs (Sautéed)
Ethiopian Fish Tibs — firm fish cubes sautéed in kibbeh with onion, jalapeño, tomatoes, and berbere. The fish version of the beloved Ethiopian tibs — fast, intensely flavoured, and particularly suited to the fasting periods when fish is permitted.
Asa Tibs (sautéed) applies the tibs cooking method to fish — the kibbeh, onion, jalapeño, and berbere combination that makes beef tibs great works beautifully with firm freshwater fish. Cooked in 12 minutes, it is the fastest Ethiopian main course.
Ingredients
Equipment: Wide heavy pan
- 600g firm fish — Nile perch or tilapia, skin removed, cubed
- 2 tbsp kibbeh
- 1 onion — diced
- 2 tomatoes — diced
- 2 jalapeños — sliced
- 3 garlic cloves
- 1 tsp berbere
- 1 tbsp lemon juice
- 1 tsp salt
Method
- Toss fish cubes with lemon juice and a pinch of salt. Rest 5 minutes.
- Pat dry.
- Heat kibbeh in a wide pan over high heat.
- Add fish in a single layer. Sear 2 minutes per side.
- Add onion. Cook 1 minute.
- Add garlic, jalapeño, berbere, and tomatoes.
- Gently toss — 2 more minutes.
- Season. Serve immediately.
Chef Tips
- Dry the fish before searing — wet fish steams rather than sears.
- High heat for the initial sear — firm crust prevents the fish from breaking.
- Handle fish minimally once in the pan.
Common Mistakes to Avoid
- Wet fish — no Maillard crust.
- Over-stirring — fish breaks.
The Science
Fish proteins are held together by a weaker connective tissue than meat — the endomysium in fish is very thin. High-heat searing creates a brief protein denaturation crust on the surface that provides temporary structural integrity, allowing the fish to be moved without breaking. Once the sear is achieved, the fish can be gently tossed.
