The whole lamb leg roast is the centrepiece of Ethiopian Christmas — the lamb slaughtered before dawn, marinated through the morning, roasted through the afternoon, and brought whole to the table at the Christmas feast. It is the most spectacular Ethiopian celebration dish.

Ingredients

Equipment: Large roasting pan, Oven at 150°C then 220°C

  • 2 kg bone-in lamb leg
  • 5 tbsp berbere
  • 4 tbsp kibbeh
  • 8 garlic cloves — minced
  • 3 tbsp ginger
  • 2 tbsp tomato paste
  • 2 tbsp lemon juice
  • 3 tsp salt

Method

  1. Pierce lamb leg deeply all over with a knife.
  2. Mix marinade thoroughly. Rub into every crevice.
  3. Marinate overnight (12 hours minimum).
  4. Bring to room temperature 2 hours before roasting.
  5. Roast at 150°C for 90 minutes — low and slow.
  6. Increase to 220°C for 20—25 minutes to caramelise the berbere crust.
  7. Rest 30 minutes before carving.

Chef Tips

  • The overnight marinade is what distinguishes this from a quick roast.
  • 30 minutes of resting is non-negotiable — do not carve early.
  • The berbere crust at high heat becomes magnificently caramelised.
