Alicha Doro is the Doro Wat for those who prefer no heat — the same technique, the same ceremony, the same reverence, but with turmeric and cardamom rather than berbere producing a golden, aromatic, mild result. Served on every celebration platter alongside Doro Wat, providing balance.

Ingredients

Equipment: Heavy pot

  • 1 whole chicken — cut into 12 pieces
  • 3 tbsp lemon juice
  • 1 tsp salt (marinade)
  • 4 onions — finely diced
  • 4 tbsp kibbeh
  • 1.5 tsp turmeric
  • 1 tsp ground ginger
  • ½ tsp ground cardamom
  • ½ tsp ground coriander
  • 5 garlic cloves — minced
  • 2 tbsp fresh ginger
  • 1 cup water
  • 2 tsp salt
  • 6 hard-boiled eggs — pierced all over

Method

  1. Marinate chicken in lemon and salt for 30 minutes. Rinse.
  2. Dry caramelise onions — 25 minutes, no oil.
  3. Add kibbeh. Cook 2 minutes.
  4. Add turmeric, ground ginger, cardamom, and coriander. Toast in kibbeh 1 minute.
  5. Add garlic and fresh ginger. Cook 2 minutes.
  6. Add chicken. Coat in the golden sauce.
  7. Add water. Simmer covered 75—80 minutes.
  8. Add pierced eggs. Simmer 20 more minutes.
  9. The sauce should be golden and thick.
