🧈 Ethiopian Butter Chicken
ቅቤ ዶሮ — Qibe Doro
Ethiopian Qibe Doro — chicken slowly simmered in abundant kibbeh with onion, garlic, ginger, and mild spices including cardamom and turmeric. Less berbere, more kibbeh — the richest, most indulgent chicken preparation in Ethiopian cooking, and the mildest.
Qibe Doro is the Ethiopian answer to a butter chicken — not spicy with tomato cream, but rich and golden with kibbeh, fragrant with cardamom and ginger. The chicken is simmered in a generous quantity of kibbeh, producing an extraordinarily rich, unctuous sauce.
Ingredients
Equipment: Heavy pot
- 800g bone-in chicken pieces
- 4 tbsp kibbeh — generous
- 2 onions — finely diced
- 4 garlic cloves
- 2 tbsp ginger
- 1 tsp turmeric
- ½ tsp ground cardamom
- ¼ tsp black pepper
- ½ cup water or chicken stock
- 2 tsp salt
Optional: 2 tbsp yogurt or ayib stirred in at the end
Method
- Dry caramelise onions — 15 minutes.
- Add kibbeh — all 4 tablespoons. Melt and coat onions.
- Add garlic, ginger, turmeric, cardamom, and pepper. Cook 2 minutes.
- Add chicken. Coat in the kibbeh sauce.
- Add water or stock. Simmer covered 40—45 minutes.
- The sauce should be rich, golden, and slightly oily — this is correct.
- Stir in yogurt or ayib at the very end if using.
Chef Tips
- 4 tablespoons of kibbeh is correct — the richness is the point.
- The resulting sauce will look oily — this is traditional and correct.
- Cardamom is the key aromatic here — use a generous amount.
Common Mistakes to Avoid
- Too little kibbeh — loses the characteristic richness.
- Adding water too early.

Kibbeh's spice infusion (see ETH092) means every tablespoon of kibbeh carries the flavours of its infused spices — when 4 tablespoons are used, the sauce becomes a concentrated expression of these aromatics, producing the characteristic Qibe Doro fragrance.
