Gurage Doro reflects the same food philosophy as Gurage Kitfo — the mekelesha spice blend brings its characteristic cardamom and rue to the chicken stew, creating a more aromatic version than standard Doro Wat. The ayib added at the very end is the Gurage signature.

Ingredients

Equipment: Heavy pot

  • 1 whole chicken — 12 pieces
  • 3 tbsp lemon juice
  • 4 onions
  • 4 tbsp kibbeh
  • 4 tbsp berbere

Mekelesha: ½ tsp cardamom, ¼ tsp rue, ¼ tsp coriander

  • 5 garlic cloves
  • 2 tbsp ginger
  • 1 cup water
  • 2 tsp salt
  • 6 hard-boiled eggs — pierced
  • 2 tbsp ayib — stirred in at the very end

Method

  1. Marinate chicken in lemon and salt 30 minutes.
  2. Dry caramelise onions — 25 minutes.
  3. Add kibbeh and berbere. Toast 4 minutes.
  4. Add mekelesha, garlic, and ginger. Cook 2 minutes.
  5. Add chicken. Add water. Simmer covered 80 minutes.
  6. Add eggs. Simmer 20 minutes.
  7. Off the heat: stir in ayib. Season.

  • The mekelesha goes in with the garlic and ginger — it needs gentle heat, not full toasting.
  • Ayib is stirred in off the heat — it should not cook.
