Harari Chicken Stew — the Doro Wat of Harar, Ethiopia's ancient Islamic city, distinguished by its Arab-influenced spice balance with more cardamom, cinnamon, and ginger and less berbere heat. The eastern Ethiopian chicken that bridges the highland and lowland traditions.
Harari Doro reflects the ancient trade connections of the walled city of Harar — the Arab spice influence (cinnamon, cardamom) moderates the highland berbere heat, producing a chicken stew that is simultaneously Ethiopian and connected to the broader Indian Ocean spice world.
Ingredients
Equipment: Heavy pot
- 1 whole chicken — cut into pieces
- 3 tbsp lemon juice
- 4 onions
- 3 tbsp oil or kibbeh
- 3 tbsp berbere
- 1 tsp ground cardamom
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground cloves
- 5 garlic cloves
- 2 tbsp fresh ginger
- 3 tomatoes — diced
- 1 cup water
- 2 tsp salt
- 6 hard-boiled eggs — pierced
Method
- Marinate chicken in lemon and salt 30 minutes.
- Dry caramelise onions — 20 minutes.
- Add oil/kibbeh. Add berbere, cardamom, cinnamon, ginger, cloves. Toast 3 minutes.
- Add garlic, fresh ginger, and tomatoes. Cook 5 minutes.
- Add chicken. Add water. Simmer covered 70 minutes.
- Add eggs. Simmer 20 minutes.

- Cinnamon is what distinguishes Harari — use it clearly.
- Slightly less berbere than highland version — the spice balance shifts toward aromatics.
Common Mistakes to Avoid
- Too much berbere — loses Harari character.
- Omitting cinnamon.
The Science
Cinnamon's cinnamaldehyde and cardamom's 1,8-cineole are both aromatic volatile compounds that evaporate during cooking — adding them late in the toasting process preserves more of their volatile character in the finished sauce.
