🍗 Ethiopian Chicken Gored Gored Style
ዶሮ ጎረድ ጎረድ — Doro Gored
Ethiopian Doro Gored — chicken breast cut into cubes, very quickly sautéed in mitmita-infused kibbeh, remaining slightly pink inside. The chicken version of Gored Gored — briefer cooking, more chilli heat, served with injera as a spicy starter.
Doro Gored applies the gored gored philosophy to chicken — the cubes are seared very briefly in intensely spiced kibbeh until just cooked but still very moist at the centre. This requires very high heat and very fresh chicken.
Ingredients
Equipment: Cast iron pan
- 500g fresh chicken breast — cubed 2cm
- 2 tbsp kibbeh
- 1.5 tsp mitmita
- 1 tsp awaze
- 2 garlic cloves — minced
- 1 tsp salt
Method
- Warm kibbeh. Add mitmita. Infuse 1 minute. Remove from heat.
- Heat clean pan until smoking hot.
- Add infused kibbeh. Add chicken cubes in a single layer.
- Sear 2 minutes per side — just cooked through to 74°C.
- Add garlic, awaze, and salt. Toss.
- Serve immediately.
Chef Tips
- Internal temperature of 74°C is mandatory — unlike beef gored gored, chicken cannot be served raw.
- The cooking is still fast — the goal is seared outside, just-set inside.
- Check temperature with a thermometer.
Common Mistakes to Avoid
- Under-cooking — chicken must reach 74°C.
- Slow pan — chicken steams.
The Science
Unlike beef gored gored, chicken gored gored is always cooked to 74°C — the Salmonella and Campylobacter risk of undercooked chicken is significantly higher than beef. However, cooking to exactly 74°C rather than higher preserves the maximum moisture and juiciness.
