Ingredients
Equipment: Wide pan
- 600g fish fillets
- 3 tbsp kibbeh
- 8 garlic cloves — sliced
- 2 tbsp lemon juice
- 1 jalapeño — sliced
- ¼ cup fresh coriander
- 1 tsp salt
- ½ tsp black pepper
Method
- Season fish with salt and pepper.
- Heat kibbeh in a wide pan over medium-high heat.
- Sear fish 3 minutes per side. Remove. Set aside.
- In the same pan: add sliced garlic. Cook 2 minutes until golden.
- Add jalapeño and lemon juice.
- Return fish. Coat in garlic kibbeh. Cook 1 more minute.
- Scatter coriander.

- The garlic must be sliced, not minced — it needs to caramelise into golden slices.
- Remove fish before cooking garlic — garlic burns faster than fish cooks.
