Ethiopian Fish Soup — fish simmered with onion, garlic, turmeric, ginger, and coriander into a light, restorative broth. The fasting-period healing soup — lighter and more gently spiced than fish wat, serving as both a soup and a source of protein.
Asa Shorba is the gentle healing soup of Ethiopia's lake communities — the freshwater fish simmered with turmeric and ginger into a golden broth of genuine restorative power. Given to those fasting, those recovering from illness, and drunk on cold highland evenings.
Ingredients
Equipment: Large pot
- 600g fish — whole small fish or bone-in pieces
- 2 litres water
- 1 onion — halved
- 4 garlic cloves
- 2 tbsp ginger — sliced
- 1 tsp turmeric
- ½ tsp black pepper
- ½ tsp ground cardamom
- 2 tsp salt
- ¼ cup fresh coriander
- Lime wedges
Method
- Place fish in pot with cold water.
- Bring to a gentle boil. Skim foam — 3 minutes.
- Add onion, garlic, ginger, turmeric, pepper, and cardamom.
- Simmer 20—25 minutes on lowest heat.
- Remove fish. Flake meat. Return to broth. Discard bones.
- Season. Garnish with coriander. Serve with lime.
Chef Tips
- Skim foam carefully — produces a cleaner broth.
- Fish broth cooks much faster than meat broth — do not over-simmer.
- The soup should be light golden from the turmeric.
Common Mistakes to Avoid
- Over-cooking — fish falls apart and becomes mushy.
- Not skimming foam.
The Science
Fish produces gelatine from its collagen at lower temperatures and shorter times than meat — even 20 minutes of gentle simmering extracts significant gelatin from fish bones, producing a slightly body-rich broth. The inosinate (IMP) in fish also enhances umami perception in the broth.
