EasyDifficulty

Tikil Gomen (literally 'spiced cabbage') is the most mild-mannered of Ethiopian vegetable dishes — the cabbage's natural sweetness, the carrots' beta-carotene, and the gentle spicing of turmeric and cumin make it a universally loved side dish. It appears on virtually every Ethiopian mesob.

Ingredients

Equipment: Large pot

  • ½ head cabbage — roughly chopped
  • 2 medium potatoes — cubed
  • 1 carrot — sliced
  • 1 onion — diced
  • 2 garlic cloves
  • 1 tsp turmeric
  • 1 tsp cumin
  • 2 tbsp oil
  • 1 tsp salt
  • ¼ cup water

Method

  1. Heat oil. Cook onion until golden.
  2. Add garlic, turmeric, and cumin. Stir 30 seconds.
  3. Add potatoes and carrot. Stir. Add water.
  4. Cover. Cook 10 minutes.
  5. Add cabbage. Stir through.
  6. Cover. Cook 8 more minutes until everything is tender.
  7. Season.

Chef Tips

  • The cabbage wilts significantly — start with what seems like too much.
  • Add potatoes before cabbage — they take longer.

Common Mistakes to Avoid

  • Adding cabbage at the same time as potatoes.
