Ingredients

Equipment: Large pot

  • 600g potatoes — peeled and cubed
  • 2 onions — diced
  • 3 garlic cloves
  • 1 tbsp ginger
  • 1 tsp turmeric
  • ½ tsp black pepper
  • 3 tbsp oil
  • ½ cup water
  • 2 tsp salt

Method

  1. Heat oil. Cook onion until golden.
  2. Add garlic, ginger, turmeric, and pepper. Stir 1 minute.
  3. Add potatoes. Stir to coat.
  4. Add water. Cover. Cook 20—25 minutes.
  5. Potatoes should be very tender.
  6. Some should have partially dissolved — natural thickening.
  7. Season.
