Ethiopian Roasted Chickpea Snack — chickpeas soaked, dried, and dry-roasted until crunchy and golden. Part of the Qolo tradition (ETH018) — the dry-roasted snack eaten throughout the day, at church, at markets, and during coffee ceremonies.
Roasted chickpeas are the legume component of the Ethiopian Qolo snack tradition — eaten alongside roasted barley, they form the complete snack that sustains Ethiopian daily life. Crunchy, nutty, and satisfying.
Ingredients
Equipment: Heavy dry pan
- 2 cups dried chickpeas — soaked overnight
- 1 tsp salt
Optional: berbere, mitmita, or plain
Method
- Soak chickpeas overnight. Drain. Spread on a cloth. Dry thoroughly.
- Heat a heavy dry pan over medium heat.
- Add chickpeas. Roast, stirring constantly, for 20—25 minutes.
- They should be golden, crunchy throughout, and nutty-smelling.
- Season with salt while hot.
- Cool completely before eating.

- Must be completely dry before roasting — wet chickpeas steam instead of roast.

- Wet chickpeas — steam and become tough rather than crunchy.
