Niter Kibbeh differs from basic Kibbeh in its additional spice complexity — more aromatics, including korerima (Ethiopian cardamom), koseret (an Ethiopian aromatic herb), and sacred basil (besobela). These additions produce a kibbeh of greater aromatic depth.

Ingredients

Equipment: Heavy saucepan, Fine cheesecloth, Clean glass jar

  • 500g unsalted butter
  • 1 small onion — diced
  • 5 garlic cloves — halved
  • 3 tbsp fresh ginger — sliced
  • 1 tsp turmeric
  • 1 tsp ground cardamom (or 3 green pods)
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp dried rue (tena adam)

Premium additions

  • 1 tsp korerima (Ethiopian black cardamom) — or additional green cardamom
  • 1 tsp dried koseret (Ethiopian herb) — or dried thyme as substitute
  • 1 tsp dried sacred basil (besobela) — or regular basil
  • ½ tsp black pepper

Method

  1. Melt butter in a heavy saucepan over the lowest possible heat.
  2. Add all aromatics and spices.
  3. Gently simmer on lowest heat — the butter must not fry the spices, only gently infuse.
  4. Cook for 25—30 minutes until foam subsides and the butter is golden and fragrant.
  5. The milk solids should be light gold at the bottom — not dark.
  6. Strain through cheesecloth into a clean jar.
  7. Discard all solids.

  • Korerima (Ethiopian black cardamom) is dramatically different from green cardamom — smoky, camphor-like, and very complex. Find it at Ethiopian grocery shops.
  • Koseret gives Ethiopian kibbeh its distinctive character unavailable elsewhere.
  • The lowest possible heat for the entire infusion — burning is the only way to fail.
  • Premium kibbeh is best made in a large batch and used over months.

  • Too high heat — darkens milk solids, produces burnt flavour.
