Ethiopian garlic butter sauce takes kibbeh as its base and enriches it with slowly cooked golden garlic — the garlic caramelises into the kibbeh fat, producing a sauce of extraordinary fragrance and depth used across Ethiopian grilling and fish preparations.
Ingredients
Equipment: Small saucepan
- 3 tbsp kibbeh
- 6 garlic cloves — thinly sliced
- 1 tbsp lemon juice
- ¼ cup fresh coriander or parsley
- Pinch of salt
Method
- Melt kibbeh over medium-low heat.
- Add sliced garlic. Cook slowly — 5—6 minutes until golden.
- Do not rush — garlic must be golden, not burnt.
- Remove from heat.
- Add lemon juice (it will sizzle).
- Add herbs and salt.
- Pour over fish, tibs, or use as a dipping sauce.
