Ethiopian Collard Green Sauce — blanched collard greens sautéed with garlic and onion, then roughly puréed into a thick, deeply green sauce used as a condiment alongside kitfo, tibs, and the celebration platter. The green element in liquid form.
Collard green sauce is Gomen (ETH106) taken one step further — after sautéing, the greens are roughly puréed into a thick sauce that can be used as a condiment, spooned over injera, or used as the green base for a celebratory platter.
Ingredients
Equipment: Wide pan, Blender or food processor
- 400g collard greens — blanched and chopped
- 2 garlic cloves
- 1 small onion — diced
- 2 tbsp oil
- 2 tbsp lemon juice
- 1 tsp salt
Method
- Blanch collard greens 3 minutes. Drain and squeeze dry.
- Heat oil. Cook onion and garlic until golden.
- Add blanched greens. Cook 5 minutes.
- Cool slightly. Blend roughly — leave some texture.
- Add lemon juice. Season.
Chef Tips
- Rough purée — not completely smooth.
- Squeeze excess water from greens before blending.
Common Mistakes to Avoid
- Too smooth — loses the identity of collard greens.
- Not squeezing out water — watery sauce.
