Meat sambusa is the celebration sambusa — during Ramadan, iftar tables are laden with meat sambusa fried at sunset. The minced beef filling, spiced with berbere, berbere, and jalapeño, is more intensely flavoured than the lentil version and produces the most satisfying bite.

Ingredients

Equipment: Pan for filling, Rolling pin, Deep pan

    Sambusa Pastry (same as ETH161)

    • 2 cups all-purpose flour
    • ½ tsp salt
    • ½ cup water
    • 2 tbsp oil

    Meat Filling

    • 300g minced beef or lamb
    • 1 onion — very finely diced
    • 3 garlic cloves — minced
    • 1 green jalapeño — finely minced
    • 1 tsp berbere
    • 1 tsp cumin
    • ¼ cup fresh coriander
    • 1 tsp salt
    • 1 tbsp oil for cooking
    • Oil for frying

    Method

    1. Cook filling: heat oil. Cook onion until golden. Add garlic, jalapeño, berbere, cumin.
    2. Add mince. Brown completely — break up all clumps. Cook until completely dry.
    3. Add coriander. Season. Cool completely.
    4. Make pastry as per ETH161.
    5. Shape, fill, seal, and fry as per ETH161.

    • The meat filling must be completely cooked and completely dry — raw or wet filling is dangerous.
    • Mince should be well-seasoned — the pastry is neutral.
    • Make the filling the day before — it firms in the fridge and is easier to handle.
