The Ethiopian street bakery sweet roll is enriched with egg and a little sugar, fragrant with cardamom and fenugreek — the everyday bread that is not the celebration loaf (Difo Dabo) but is also not plain Kita. It occupies the comfortable everyday territory between.

Ingredients

Equipment: Bowl, Oven at 180°C

  • 3 cups all-purpose flour
  • 1 tsp yeast
  • 2 tbsp sugar
  • ½ tsp salt
  • 1 egg
  • ½ cup warm water
  • ¼ cup warm milk (or water)
  • 2 tbsp oil
  • ½ tsp ground cardamom
  • ¼ tsp ground fenugreek

Method

  1. Dissolve yeast and sugar in warm water. Rest 10 minutes.
  2. Combine flour, salt, cardamom, and fenugreek.
  3. Add yeast mixture, egg, milk, and oil. Mix to a soft dough.
  4. Knead 8 minutes. Cover. Rise 1 hour until doubled.
  5. Punch down. Divide into 12 balls.
  6. Place on greased baking sheet.
  7. Rest 15 minutes.
  8. Brush with egg wash or oil.
  9. Bake at 180°C for 20—25 minutes until golden.

Chef Tips

  • Fenugreek is the Ethiopian signature — even ¼ tsp gives the roll its character.
  • Brush with egg wash for a shiny top.

Common Mistakes to Avoid

  • Over-rising — dough collapses in oven.
  • Omitting fenugreek.

The Science

The egg in this enriched dough contributes lecithin — an emulsifier that creates a more tender crumb by preventing gluten from forming a tight network. The fenugreek's fenugreek lactone contributes the characteristic slightly bitter-sweet aroma.
